Salt: from tradition to innovation


A stone’s throw from the ancient salt pans, a collaborative agreement between the MUSA Museum of Salt and the Cervia Hotel and Catering School has brought about a modern and worldly collection of recipes.

The project is called “Salt: from tradition to innovation”, and was selected as part of the first edition of the “I love cultural heritage” competition of ideas (2011-2012). It resulted in a collection of recipes that highlights traditional dishes from Cervia while exploring the frontiers of cuisine, thanks to research carried out by the Hotel School’s students under the supervision of their docents.
